Woodland celebration cheese tower

Inspired by woodland walks and the beauty our Cheshire woodlands encompass, I have created a woodland wedding tower with a few hedgerow foraging of blackberries on the way!

England’s oldest and in times gone by, only made for special occasions this cheese is smooth and creamy, it has a slightly nutty flavour with the subtle addition of sage running through it.

Cropwell Bishop white stilton and Blueberry made in the village of Cropwell Bishop in Nottinghamshire; fresh tasting with the addition of Blueberries, very smooth and creamy, crumbly but soft texture. White Stilton has a Protected Designation of Origin and can only be made in one of three counties – Derbyshire, Nottinghamshire and Leicestershire from locally-produced milk. This cheese is best eaten young at 3-4 weeks of age.

Very fitting for a Woodland celebration cheese tower, the gorgeous Cornish Yarg, it has a dark green rind made up of stinging nettles and a very obvious white mould around the nettle leaves, incidentally the leaves are brushed on by hand one by one. The nettle leaves give this cheese a fresh sort of herby bite to it and what lies beneath is a creamy tasting cheese with hints of citrus.

Cornish Yarg gets its name from the original cheese maker and creator of this wonderful cheese, Alan Gray, which is Yarg spelt backwards!  https://lynherdairies.co.uk/

Burt’s Blue made by Claire Burt in Ollerton, Near Knutsford in Cheshire; a  soft mould ripened blue cheese. The ‘mouldy coat’ of each cheese varies depending on the season, from blues’ to paler ‘grey and blues to green, the rind is edible and delicious!!  Each cheese is pierced by hand during the ripening process to encourage and allow the growth of mild blue veins, this gives way for the lovely character and flavour this cheese has to offer.
