Grated cheese is often sprayed by the manufacturer with a preservative such as potato starch, cellulose or Natamycin. Natamycin is a fungicide and is used as a surface treatment of cheeses to prevent yeasts and moulds developing. Potato starch is the extracted starch from potatoes, the starch turns to a light, powdery, flour like consistency which is then sprayed onto the cheese and cellulose is a molecule consisting of carbon, hydrogen and oxygen atoms, which dehydrates the cheese giving it the dry consistency and the ability to ‘flow’ rather than ‘clump’. Unfortunately, when making a grated cheese sandwich, this cheese will inevitably ‘flow’ right back out of the sandwich due to being so dry. The negative effect of this process nutritionally is also very damning, Surely, this is enough to put you off buying pre-grated cheese!
