The cheddar Gorge cheese company have been making traditional cheddar in Cheddar since 2003.
The cheese makers use only local, fresh unpasteurised milk and they truly believe in their authentic cheddar recipe and of course made in the heart of Somerset, the home of Cheddar cheese the authenticity starts right there!
Cheddar cheese is quite possibly the most popular cheese and one which is made all over the world. Cheddar Gorge cheese company believe that the original recipe and the best, lies with them! Taking into account the environmental factors such as the weather, earth, and other characteristics which affect the quality of the cow’s milk play a vital role in the production of this authentic cheese.
In 2006, the Cheddar Gorge cheese company began maturing some of their cheese in the nearby caves within the Cheddar Gorge, the conditions in the caves make perfect conditions for the maturation of the cheese, the consistency of temperature and humidity in the caves plays a crucial role in how the cheese tastes, the texture and the moisture content of the cheese.
Interestingly they use Gough’s cave as their cheese larder! The cave aged mature cheddar has been a huge success for the company due to the complex flavour, aroma and the texture of the cheese after its maturation time.
Our cheese of the month for October just had to have some representation towards autumn, darker nights and of course Halloween which conjures up thoughts of spice, depth of flavour and fiery notes. We have selected the Cheddar Gorge cheddar with chilli to add that taste bud tingling combination; firstly, you will taste the traditional cheddar and then the warmth of the chilli pops into your mouth, the heat is not overpowering, the cheese can be enjoyed with other cheeses, it doesn’t spoil your taste just gives a warm tingle!
