The Cheese is Wensleydale 200g made by Wensleydale creamery in Hawes, Yorkshire. Cheesemaking began in Hawes dates back to 1150 when the the monks first settled in Wensleydale bringing with them the recipe for this delightful cheese. The recipe was soon passed on to the women who then began making the cheese. Only Yorkshire Wensleydale is made in Wensleydale itself and the creamery only employ local people of which there are around 200.
Their cheese is made using local pasteurised milk. A tangy cheese with citrussy notes, crumbly in texture and creamy on the palette.
The perfect pairing is a Chardonnay wine due to the fruity aromas and the gentle hint of oak cuts through this tangy cheese. Tasting notes included.
