The cheese is matured typically for 12-15 months and is a cloth bound cheese.
A rich buttery cheddar, brothy or caramel notes can be detected and is sometimes a little ‘grassy’. The cheese is naturally rinded which means the rind is produced naturally during the maturation process. This cheese won the 2023 world cheese award in Norway!
