Blue stilton has a PDO (protected designation of origin) meaning that it can only be made in 3 counties, these are Nottinghamshire, Derbyshire and Leicestershire.

Cropwell is made using milk from a single herd of cows, made with pasteurised milk from farms around the Peak District. Penicillin Roquefort is added during the making process, once the cheese is made and has matured for around 5 weeks, the cheese is pierced allowing air to enter the cheese, this process stimulates mould growth creating the beautiful blue vein within. the process is repeated a week later after which time the cheese is graded and hand wrapped.
