The cheese –
Tarporley Blue 160g – our very own signature cheese, although produced in Derbyshire by Hartington Creamery, this cheese is very special to us, made to commemorate the Queens platinum jubilee in 2022 and our anniversary here at Rose Farm in Tarporley. Tarporley Blue is brine ripened which basically means the cheese is matured in air tight containers in brine. Annatto is added to give it the rich orange colour. Matured for only a few months, we buy the cheese in young and mature it ourselves. Described as a mild blue cheese, slight herby undertones with a creamy texture.
Burt’s Blue 180g- Made by Claire Burt at Bidlea Dairy in Holmes Chapel. A soft mould ripened cheese meaning that the culture is added during the making process to ripen the cheese; the colour of the rind changes from season to season, as it matures the flavour becomes more rounded and the paste is much softer, the rind is edible and adds lovely texture to this wonderful blue cheese.
Crabtree 200g- Made by Anne at Larkton Hall in Malpas. A full and creamy tasting cheese with a squishy paste. Slightly salty due the Cheshire plains and a hint of apple is noted this is said to be due to the cows grazing within the grounds of the apple orchards.
We have found the Weetwood Ale pairs really well with the Blue cheese and although cider is a great match with crabtree, a Gin and tonic with a slice of lemon, pairs wonderfully well with this cheese.
