Where does this blue cheddar originate from?

Cheddar is a small town in Somerset, it is at the foot of the spectacular Mendip hills; One of Britain’s most amazing natural landmarks and an area of natural beauty.

Mendip hills can be reached through the Gorge which is 400 feet deep and three miles long, England’s largest Gorge.

The famous cheddar Caves would have been created due to the Cheddar Yeo River gradually making its way underground when water from melting glaciers formed a river which over time carved into the limestone rock creating the steep cliffs.

About the Blue Cheddar

We know that the ‘blue’ veins of a stilton or a blue cheese is the ‘mould’ and we also probably all know that the blue veins are created by firstly adding penicillium Roqueforti to the milk before the cheese is made then during the maturation, the cheese develops the veins.

Described by the makers of this cheese as an authentic cheddar, this cheese is drier and whilst maturing the cracks form on the outside rind creating the natural blueing as the cracks enable access for the natural moulds to get into the body of the cheese. The cheese is matured for a lengthy time in cool, humid rooms which is the ideal environment for maturation and of course for these mould spores to do their thing!

Although the blueing of this cheese was initially a happy accident, the cheese was so popular became something to talk about in the cheese shop in Cheddar village.

How does this blue cheddar taste?

Described by its producers as having an interesting blue flavour, we can certainly second that. The cheddar has a tangy flavour with the distinctive crystallization of saltiness which obviously occurs during the maturation process.
