Easter cheese grazing!!

 

Easter has always been about Eggs, never has it been about cheese boards!
Easter coincides with spring and spring harmonises with new born lambs and goats and a myriad of young cheese such as goats, ewes, and sheep’s cheese.
Soft cheeses such as goats and sheep’s cheese are lovely crumbled and scattered over salad; Fettle or now named Mrs Bell’s salad cheese is made by Shepherds Purse in Yorkshire, it was first made to help the sheep milk producers as they had an abundance of sheep milk but no where for it to go during Covid, it was launched on May 4th 2020 then renamed on July 12th 2022. Mrs Bell’s Salad Cheese is a distinctively creamy salad-style cheese combining a soft, slightly crumbly texture with a sweet piquant flavour. https://www.shepherdspurse.co.uk/
We may not be alfresco dining just yet however, discs of goat log griddled and placed on a bed of roasted root veg, drizzled with honey, and topped with pine nuts will surely tantalise anyone’s taste buds.

 

So, with Easter fast approaching we have some wonderful cheese for a grazing cheese board.

Of course, the fresh spring milk cheese is in abundance this time of year but lets not forget about the slightly more complex cheese’s we have available.

With cheese chosen, lets now consider our pairings to put it all together..

The bright, lactic flavour of fresh and soft-ripened goat cheese pair well with honey and citrusy fruits such as oranges, lemons or tangy rhubarb; all dolloped on cheese with a crisp cracker or crunchy baguette is worth a try.

For the earthy and mould ripened cheese, pairings include nutty notes of walnuts or almonds, proscuitto and quince jelly.

Mrs Appleby’s Coloured Cheshire  pairs so well with fruit, as the acidity of the cheese complements the sweetness of the fruit. Appleby’s Cheshire also has excellent cooking properties and goes well with a crisp glass of cider. (please note this cheese is NOT suitable for vegetarians)
