Cheese of the Month …. Cornish Yarg with nettle

The significant qualities of this cheese make it one of my all-time favourites, not only do I love the texture of this low fat, medium in flavour semi hard cheese but I love the story behind its origin.

Cornish Yarg gets its name from the original cheese maker and creator of this wonderful cheese, Alan Gray, which is Yarg spelt backwards!

It is said that he retrieved the recipe from around the 17th century in his attic and sold it to a nearby farm in 1984, the cheese was originally made by the Horrell family in a small village called Rilla Mill.

Cornish Yarg has a dark green rind made up of stinging nettles and a very obvious white mold around the nettle leaves, incidentally the leaves are brushed on by hand one by one. The nettle leaves give this cheese a fresh sort of herby bite to it and what lies beneath is a creamy tasting cheese with hints of citrus.

Recipe suggestions by Lynher Dairies the makers are Yarg and nettle risotto, crumbled over a crisp summer salad or due to Cornish Yarg’s low melting point it makes a perfect baking cheese and apparently wonderful as a Yarg rarebit!!!

 

Pair Cornish Yarg with Chardonnay or other fruity white wine.

Cornish Yarg is available to buy as a whole piece either 1kg or 1.7kg or we are now cutting this cheese and selling as a pre-pack portion.
