Burt’s Blue our cheese of the month

A Cheshire made Cheese by Claire Burt

Introducing… Burt’s Blue

Burt’s Blue cheese was born in January 2009 and named after its maker, Claire Burt who is based near Knutsford in Cheshire.

It was a career in the dairy industry which led Claire to follow her passion for cheese making and ultimately set up her business. Claire won gold medal at the international cheese awards; this led her to pursue the business full time.

Claire has developed the recipe herself and is still hand made to this day, it is considered as the flagship cheese.

A soft mould ripened blue cheese, made in small vats using milk from the local herd. The colour of the rind varies seasonally from a grey to a blueish green and the rind is edible. Burt’s blue is pierced by hand during the ripening process to encourage and allow the growth of the blue veins throughout.

Burt’s Blue is available to buy from The Good Cheese Company as a 1kg, 500g or 180g mini..

Check out Claire’s website for information about her cheese making courses. https://burtscheese.co.uk/workshops/
